Grilled BBQ Chicken + Pineapple Kabobs

Tangy, sweet, and savory–this is the BEST recipe for a summer grill out!


Prep time: 2 hour, 30 minutes

Grill time: 20 minutes

Total time: 2 hours, 50 minutes

Makes 5-6 kabobs

  • 2 chicken breasts, thawed and cut into large hunks
  • 2/3 cup barbecue sauce
  • 2/3 teriyaki sauce (try making my fav homemade teriyaki sauce recipe!)
  • 2 cloves of garlic, minced (about 2 Tablespoons)
  • 1/2 sweet onion, sliced into large hunks
  • 1 yellow or red bell pepper, cut into large hunks
  • 2 cups fresh pineapple, cut into large hunks
  • Prepare chicken for marinating for 2 hours: Cut into large hunks.
  • In a bowl, add barbecue sauce, teriyaki sauce, and garlic. Mix together well. Set aside 1/2 cup of mixture in another dish (for dipping sauce later).
  • Add chicken and coat well.
  • Cover and put in fridge for 2 hours (minimum) or overnight (maximum).
  • When ready to cook, remove chicken from marinade and empty sauce out. DO NOT USE THE SAUCE that the chicken marinated in.
  • Prepare the rest of the kabob ingredients: cut the bell pepper, onion, and pineapple into sizeable chunks that will fit on a skewer.
  • Begin assembling your skewers. Alternate with chicken, onion, bell pepper, and pineapple.
  • Preheat grill to 450 degrees Fahrenheit. Add skewers and grill for about 8 minutes per side. You will want to get a nice char on them–it adds to the flavor.
  • Remove from the grill. Serve immediately with white or jasmine rice. Use your extra sauce that you set aside as dipping sauce.
  • If you don’t have skewers, don’t panic. You can still grill this, either in a grilling pan or using a skillet. You just probably won’t get the nice char marks on them, which is okay, you’ll still get a delicious flavor palate.
  • If you don’t want to grill or don’t have one, you can toss all of the ingredients into a skillet on the stovetop with some olive oil and saute for about 10 minutes until the chicken is cooked through.
  • You don’t have to serve with rice, but I find it adds the right amount for a hearty meal. You could also add some steamed veggies as a side.

This is one of those meals that I wasn’t expecting to be as good as it was–it came out way better! My family loved it and it really felt so summery with the barbecue sauce and tangy flavors of teriyaki, along with the sweetness of the bell peppers and pineapple.

Because I only had four skewers and way more ingredients, I ended up tossing the rest of my ingredients in a pan while my husband grilled and sauteed everything up, then added it to a meal prep box for the following day. Let me tell ya, it was the right move, friend. It reheated great and future-me was thanking past-me for having a hearty lunch prepped.
