Italian Sliders with Slaw

Great to make for a crowd or just to watch the big game! These are easy to make and full of flavor, you’ll be counting down the minutes waiting for them to come out of the oven.

Cook time: 10 minutes

Total time: 25 minutes

Makes 12 sliders

  • Hawaiian sweet rolls, 12 count
  • Sliced deli ham or turkey
  • Genoa Salami (or your choice of salami)
  • Pepperoni (large, deli meat size)
  • Provolone cheese, sliced (about 4 slices)

For the slaw:

  • 1/2-3/4 cup mayonnaise (I use Hellmann’s and lean towards 1/2 cup)
  • 1 teaspoon Italian seasoning
  • 1/2 Tablespoon olive oil
  • 1/2 Tablespoon Balsamic vinegar
  • Romaine or any leaf lettuce
  • 1-2 Roma tomatoes
  • Red onion, a few slices
  • 1/4 cup banana peppers or pickled jalapeños
  • Preheat oven to 350 degrees Fahrenheit.
  • Line a baking sheet with parchment paper and set aside.
  • Prepare your slaw by chopping lettuce, tomatoes, onion, and banana peppers or jalapeños. Add to a bowl along with the mayonnaise, Italian seasoning, olive oil, and Balsamic vinegar. Mix together well.
  • Carefully cut your Hawaiian buns in half lengthwise. This can be a little tricky–I stand up the entire loaf and cut down in a sawing motion so you have two large sheets of rolls (top and bottom). Breaking them apart and cutting them individually will take more time and ultimately be more messy, but if you choose to do it that way, push the bottoms as close to each other as possible on the baking sheet before assembling.
  • Assemble the sliders. Layer the ham or turkey, salami, and pepperoni. Add the slices of provolone. Then carefully add your slaw on top and spread evenly.
  • Put your slider tops on so they look fully assembled.
  • Bake for 10 minutes or until the cheese is melted. Serve immediately.
  • I recommend only doing 1/4 cup of banana peppers or jalapeños, or if you want both then making a combined total of 1/4 cup. Any more and it gets to be a little too much and will just fall out of the slider.
  • I love to serve these with sweet potato fries or a thick wavy potato chip that acts as a scoop for the slaw that falls out of the slider.

My husband and I first made these during football season for one of the big games and we were so impressed at how much flavor could be packed into one little slider. I’ll be honest, traditional sliders don’t really get me excited to eat. Melted cheese and meat is kind of ‘ho-hum’ for me and if I’m going to eat cheese and meat, I’d just prefer a sub sandwich, not toasted. But these…

The secret is in the slaw. The slaw is what kicks these up a notch and takes them to a whole new level.

Now I make them on a busy weeknight or whenever I don’t want to clean up a bunch of meal dishes because I can just toss the parchment paper and add the slaw bowl to the dishwasher along with plates and that’s it.
