A classic appetizer to feed the masses and one of my favorites for game day! It makes enough to feed 12 and is much less messy than actual tacos. Not to mention less filling so you can still snack on other game day favs AND gluten free!

Total time: 45 minutes
Makes about 12 servings

- Two 16 oz cans refried beans (I like Siete brand)
- 16 oz sour cream
- 8 oz (half a block) room temperature cream cheese
- 2 packets (or 5 Tablespoons) taco seasoning, divided
- 2 cups Pico de Gallo or salsa
- 1 cup guacamole (<- grab my homemade recipe!)
- 1-2 cups shredded mild cheddar cheese
- 2 oz can sliced black olives
- Green onion, sliced (optional)
- Cilantro, chopped (optional)

- In a bowl, use an electric hand mixer to blend both cans of refried beans and one packet of taco seasoning. Set aside.
- In another bowl, add room temperature cream cheese, sour cream, and the second packet of taco seasoning. Blend well.
- In a 9×13 baking dish (or serving dish), start assembling by adding the refried beans to the bottom and spreading across the length of the pan. Add the next layer of the sour cream mixture and spread evenly over the first layer. Add guacamole and do the same. Next comes pico (or salsa). Add shredded cheddar cheese, then sliced olives. Top with green onions and cilantro if you like.
- Chill for 20 minutes or until cooled. Serve with tortilla chips or raw veggies.

- If you don’t have a crowd to feed (or don’t want a ton of leftovers!), simply cut the recipe in half and use an 8×8 or 9×9 pan or serving dish instead of a 9×13. Just make sure you split the taco seasoning if you cut it in half so that some is in the refried beans and some is in the sour cream mixture.
I love tacos. I could eat them every single day and never get bored. But on game days, I like to have a variety of snacks, so this is how I get my taco fix without filling up too much. It’s also a lot less messy than tacos.
For a fun leftover idea, add a big dollop of this spread to a tortilla and roll it up like a burrito or eat it as a taco–all the toppings are already in it!
