Monster Cookies

These cookies have so many yummy flavors including peanut butter, chocolate, and sea salt, hitting your taste buds on all levels! Easy to make and a big crowd pleaser, you’ll love having these as an after school snack, on Sundays for football, or to share with friends or neighbors.

Prep time: 10 minutes

Bake Time: 12 minutes

Total time: 22 minutes (46 minutes total including all batches)

Makes about 18 cookies

  • 1-1/2 cups quick cook or old fashioned oats
  • 1/2 cup all-purpose flour (whole wheat or gluten free works too)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup creamy peanut butter (do not use nut butter)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 2 teaspoons vanilla
  • 3/4 cup chocolate chips
  • 3/4 cup M&Ms
  • Sea salt flakes, for topping cookies
  • Preheat oven to 350 degrees Fahrenheit.
  • Line two baking sheets with parchment paper.
  • In a medium bowl, stir together oats, flour, baking soda, and salt. Set aside.
  • In a large bowl, beat together peanut butter, softened butter, and all sugars until smooth and creamy. Scrape down the sides of the bowl, then add the eggs and vanilla and beat until combined.
  • Add the dry ingredients to the peanut butter bowl and mix until they are combined.
  • Gently stir in chocolate chips and M&Ms.
  • Scoop the dough into round balls, about 2 Tablespoons per cookie, and space apart about 2 inches on baking sheet.
  • Bake for 10-12 minutes, until cookies are lightly browned on the edges but soft in the middle.
  • Remove cookies from oven and sprinkle with sea salt. Let cool on baking sheet for about 5 minutes before removing to wire rack to cool completely.
  • Store in airtight container for up to a week.
  • You can definitely make these smaller if you want to have more cookies and stretch your batch a little further, but be sure and lower your bake time a bit (always err on the lower end, depending on your oven and hot spots).
  • If you aren’t a sweet + salty person, you don’t have to add the sea salt flakes to the top of the cookies. I happen to love it, but my husband prefers them without salt on top. Totally optional.

These cookies do not last long in our house, which actually ends up being good because then we don’t have too many on hand. They also never get stale.

I also love that they are a hearty cookie because I can eat just one and without wanting to go back and have two more to get my fix.

Until next time,
