Cucumber Bites

These fun little bite-sized appetizers are great for gatherings! These little bites are easy to assemble, on the healthier side of snacks, and delicious. You’ll be glad you have these around for game day, brunch, tea, happy hour, or the family picnic!

Total time: 10 minutes

Makes about 32 bite sized pieces

  • 2 large English cucumbers
  • 1/2 cup cream cheese, softened
  • 2 Tablespoons of sour cream OR plain Greek yogurt
  • 2 Tablespoons fresh dill, chopped
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt + pepper, to taste

Optional:

  • Everything bagel seasoning
  • Cherry tomato halves
  • Smoked salmon slices
  • Feta crumbles
  • In a medium bowl, mix cream cheese, sour cream or yogurt, lemon juice, dill, garlic powder, salt, and pepper until smooth and creamy.
  • Cut off the ends of the cucumbers. Optional: Using a vegetable peeler, stripe your cucumber so every other peel has skin and every other is peeled off.
  • Cut your cucumbers into thick rounds, about 1/2 inch.
  • Spoon or pipe the cream cheese mixture on top of each cucumber slice.
  • Garnish with extra dill, everything bagel seasoning, cherry tomato halves, smoked salmon slices, feta crumbles, bacon crumbles, or your own choice of toppings.
  • Serve immediately or chill in fridge until ready to serve.
  • You can use regular garden cucumbers. English cucumbers have less seeds and typically thinner skin, so it makes it a little easier to assemble and a lot less watery.
  • In a pinch, if you don’t have all the ingredients, I have done whipped cream cheese with everything bagel seasoning instead of the rest of the ingredients, and it was a good enough alternative.
  • Because piping is such a chore (in my opinion), unless you’re hosting a shower, brunch, or other semi-formal event, just use a knife or teaspoon to spread the cream cheese mixture. Way easier cleanup and a lot less mess and fussiness.

It’s no secret to my family that I love cucumbers, so I’m always figuring out ways to incorporate them into recipes. This one is great because you don’t really need serving dishes or cutlery because they’re just bite sized pieces. Truly great for the ones in the kitchen grazing.

I also love this recipe because there’s really not a time of year these are better–they’re always good!
