Chocolate Chip ‘Mallow Bars

These decadent bars are easy to make and a dream to eat! Ooey Gooey and the perfect treat for anyone with a sweet tooth.


Prep time: 10 minutes

Bake time: 30 minutes

Total time: 40 minutes

Makes about 24 bars

  • 1/2 cup butter, room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 whole egg, plus 2 eggs (you will separate the yolks from the whites–keep both!!!)
  • 1-1/2 cups flour
  • 1 tsp baking powder
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows
  • 1 cup semi-sweet chocolate chips
  • 1 cup light brown sugar, packed
  • Preheat oven to 350 degrees Fahrenheit.
  • Spray a 9×13 baking pan with your choice of nonstick spray
  • In a large bowl, cream together butter, granulated sugar, 1 whole eggs, plus 2 egg yolks (remember, keep the egg whites!), and vanilla until smooth.
  • Add in flour, baking powder, and salt and mix until just combined.
  • Spread mixture into prepared pan.
  • Top with chocolate chips and mini marshmallows.
  • In a separate bowl, mix together the 2 egg whites using an electric mixer, about 2 minutes on high, until stiff peaks form.
  • Fold in the brown sugar (that means gently turn your egg whites over onto your brown sugar) and stir until combined and there are no lumps.
  • Spread on top of chocolate chips and marshmallows.
  • Bake 30-35 minutes until top is golden brown.
  • Allow to cool completely before cutting into squares to serve.
  • Store airtight at room temperature for up to three days.
  • If you prefer not to use white sugar, coconut sugar is a great alternative which has a caramel-like flavor and actually compliments this recipe nicely.

These kind of remind me of s’mores but in a bar version. Still ooey gooey, still a little messy, but contained in a slightly more manageable square. These are a fall favorite that I found last year and now I look forward to making them again when it isn’t so hot outside and I can handle the oven being on.

They’re perfect for crowds and get-together’s because they are best fresh and only keep for a few days, but you’ll likely not have to worry about them sticking around much longer after that anyway because they’re so yummy! 🙂
