No-Bake Peanut Butter Chocolate Cookies

These delish no-bake cookies are made with clean ingredients and NO sugar! I love grabbing one in the morning on my way out the door or as a snack when I have a sweet tooth. Quick to make and quicker to disappear–you might want to double the batch!


Prep time: 5 minutes

No bake time: 20 minutes

Total time: 25 minutes

Makes about 18 cookies

  • 1/2 cup creamy peanut butter
  • 1/4 cup honey (or 100% maple syrup)
  • 1/4 cup coconut oil (or butter)
  • 1/4 teaspoon sea salt
  • 2 Tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla
  • 1 cup quick cooking oats (uncooked)
  • 1/4 cup unsweetened coconut flakes
  • Line a baking sheet with waxed paper and set aside.
  • In a saucepan, add peanut butter, honey, salt, and coconut oil and heat, stirring continuously, until everything is melted and well combined.
  • Stir in vanilla and cocoa powder.
  • Add quick cooking oats and mix together well.
  • Add coconut and stir until completely combined.
  • Let cool 2-3 minutes off of heat, then drop Tablespoon sized dollops of your mixture onto your baking sheet until you’ve used all of your mixture.
  • Chill in fridge for about an hour or until hardened, then serve!
  • Store in an airtight container in the fridge.
  • These are best served cold because the coconut oil tends to make them melt if they sit at room temperature. You can store them in the fridge for about a week, but I doubt they’ll last that long in your house.
  • I prefer using honey in this recipe because it’s a little thicker than maple syrup and sticks everything together just a little better, but I’ve done both and they both work and taste good.
  • If you don’t have coconut oil, butter works just fine too. You can also sub out the peanut butter for any nut or seed butter.
  • If you don’t like coconut, leave it out but add in an extra 1/4 cup of quick cook oats.

I love this recipe because every time I make it, it turns out exactly the same! I also love that it’s like a cookie but I don’t have to bake it in the oven and heat up the house during the summer months.

I usually make these for myself and my husband as “treats” or grab one on my way out the door and have it quickly in the truck. They travel okay, but you will want them to stay cold or they get pretty messy. If I’m bringing some anywhere I usually add a cold pack so they don’t melt.
