Frozen Yogurt Bark

Frozen Yogurt Bark

A perfect tasty treat for those hot summer days, you AND your kids will love them! A great alternative to traditional ice cream and much cleaner than high-sugar ice pops, this tasty treat is made with Greek yogurt and fresh fruit. These will be a summer staple in our house!

Prep time: 10 minutes

Freeze time: 3 hours

Makes about 6 servings

  • 1-1/2 cups plain whole milk Greek yogurt
  • 2 Tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 cup sliced fresh strawberries
  • 1/2 cup fresh blueberries
  • 2-3 Tablespoons unsweetened coconut flakes
  • Line a rimmed baking sheet with parchment paper. If a baking sheet is will not fit in your freezer, find a container or baking dish that will, and line that with parchment paper.
  • In a medium bowl, add yogurt, maple syrup, and vanilla and mix together well.
  • Spread the yogurt mixture evenly, about 1/4″ thick, onto your prepared baking sheet/dish in a rectangular shape.
  • Add the strawberries and blueberries on top and spread out evenly across your mixture. Sprinkle coconut flakes on top.
  • Freeze for 3 hours or until yogurt is firm. Cut or break into snack sized pieces and serve. Store in sealed container or freezer bag for up to 90 days.
  • Before snacking, letting the pieces sit out for 3-5 minutes to soften a little so they aren’t so hard to bite into.
  • An alternative recipe would be to sprinkle some cinnamon over the top of your mixture and top with blueberries and walnuts. Also yummy.
  • Less clean ingredients but also good? S’mores version: sprinkle mini chocolate chips, mini marshmallows, and graham cracker crumbs over the top of your mixture. Wayyyyyy yummy, but also way more sugar.

The first time I made this recipe I was looking for super clean and low sugar option snacks because I cut processed sugar out of my diet for 90 days (and ended up doing it for six months) so I wanted something that felt like a treat, but actually didn’t deter from my goal. I dug it up again for similar reasons now, but the timing is perfect.

It’s great for summer because it’s cold and tastes a lot like frozen yogurt or ice cream without the added sugar. And you get a kick of protein because of the whole milk Greek yogurt.

It’s also a fun and easy recipe for your littles to help make and get them some kitchen time without a big mess or tons of clean up. It doesn’t take much time and might actually hold their interest by the time you get it to the freezer AND it’s a healthy snack for them!

I hope you enjoy it–until next time,
