Only four ingredients, these little babies are the perfect sweet treat for anytime! Quick and easy to make. Great for kiddos too!

Makes 16 mini bites

- 1/3 cup natural peanut butter
- 2/3 cup almond flour
- 3 Tablespoons maple syrup
- 1/8 teaspoon vanilla extract
Peanut butter filling
- 3 Tablespoons natural peanut butter
- 1 teaspoon maple syrup

- Preheat oven to 350 degrees Fahrenheit.
- Line cookie sheet with parchment paper.
- Add cookie ingredients to a bowl and mix until dough is formed. There shouldn’t be anything stuck to the sides of the bowl.
- Scoop out a teaspoon-sized (itty bitty!) portion of dough and roll into a small ball. Place on your baking sheet. Repeat for 32ish balls of dough. Try and have an even number of balls.
- Use a fork to press down on each dough ball to flatten it. If it’s too sticky, wet your fork with water.
- Bake cookies for 9-10 minutes until edges are slightly golden.
- Let cool completely. They will firm up as they cool.
- Prepare peanut butter filling.
- Spread about 1/2 teaspoon on one cookie and top it with another to make a sandwich. Repeat for remaining cookies.

- You can use regular peanut butter if that’s what you have on hand. I do find regular peanut butter tends to be a bit oilier, so you may want to reduce the amount of maple syrup, or add slightly more than 2/3 cup flour (very slightly, just overfilled 2/3 cup).
- You can use regular flour if that’s what you have on hand or prefer. It does slightly change the consistency of the dough.
- If you alter any of the ingredients, which is totally fine, make sure you keep your bake time on the lower end (8-9 minutes to start) to monitor how everything comes together and avoid them baking too long and getting dry.
These little gems are perfect for packing in lunches and taking on the go! They’re low-mess and even though they’re little, they’re a BIG hit. The portion is perfect for kiddos because of their small size and you won’t feel bad for letting them have more than one!
It’s a small batch, so they go fast, but I like how quickly I can whip a batch up and only need one baking sheet for minimal cleanup/washing. And you can always double it and make more if you want more on hand or have more people to feed!
