Homemade Waffles

Running out of our usual store bought waffle mix one morning had me scrambling to see if I had the right ingredients on hand to make waffles from scratch, so I wouldn’t devastate my toddler. This is a great from-scratch recipe that is WAY better than the box stuff!

Cook time: 10 minutes

Total time: 20 minutes

Makes about 5-6 full sized waffles

  • 2-1/4 cups flour (I use whole wheat)
  • 1/4 cup granulated sugar
  • 1 Tablespoon baking powder
  • 3/4 teaspoon salt
  • 2 cups milk (we use 2%, you can use whatever you like)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs
  • 2 teaspoons vanilla
  • Preheat your waffle iron.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • Add milk, melted butter, eggs, and vanilla all at once. Stir until just combined.
  • Grease the hot waffle iron with butter or cooking spray.
  • Add about 1/3 cup of batter for each waffle to the hot waffle iron (amount you add depends on size of your waffle maker, so go less if you’re worried about spillover).
  • Cook until golden brown. Place on wire rack until ready to serve so they stay crisp and not soggy.
  • Serve with maple syrup and butter or your favorite toppings (see Notes for ideas!)
  • Toppings ideas: whipped cream + fresh fruit, peanut butter + banana slices, peanut butter + jam/jelly, maple syrup with fresh diced apples tossed with cinnamon + chopped walnuts, homemade cranberry sauce + whipped cream, peanut butter + dark chocolate chunks, peanut butter and diced bacon bits, homemade cinnamon butter + maple syrup.
  • Flour may be subbed for gluten free and milk may be subbed for dairy free without much difference.
  • If you want to reduce the amount of sugar in the recipe, try it with 2 Tablespoons instead of 1/4 cup. It is less sweet, but still has a good flavor due to the vanilla.
  • I have overfilled my waffle iron a few times making this recipe because they puff up so much when cooking. Start with less batter and add until you figure out the right amount for your waffle iron.

After the first time I made these, we haven’t made the store-box stuff again. If you’re worried it will make too many because you have a small family like me, you can definitely cut the recipe in half easily enough.

I have also made the full amount and then stored leftovers to have the rest of the week and they actually toast up decently in our toaster for reheating!

We’ve also been trying all kinds of toppings for fun, and while our default is whipped cream and berries (my husband adds maple syrup too), I also love them with maple syrup, diced apple chunks coated lightly in cinnamon, and chopped walnuts. Drool worthy.
