Need a fun spin on a classic for the upcoming green themed holiday? Look no further. These delish chocolate chip cookies are not only green, but also add some peppermint for an awesome flavor. Think mint chocolate chip ice cream in cookie form. Total yum!

Total time: 26 minutes
Makes about 2 dozen

- 1 cup butter, softened
- 1-1/2 cups sugar
- 2 large eggs
- 1 egg yolk
- 1-2 teaspoons peppermint extract (depending on how minty you want it)
- 10ish drops green food coloring
- 3-1/4 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1/2 teaspoon salt
- 12 oz dark chocolate chips (or semi-sweet)

- Preheat oven to 350 degrees Fahrenheit. Line two baking sheets (or one) with parchment paper.
- In a large bowl or stand mixer, beat the butter and sugar together until light and fluffy and both ingredients are well incorporated.
- Add eggs, egg yolk, peppermint, and food coloring.
- In a separate bowl, combine flour, baking powder, baking soda, cream of tartar, and salt. Add to wet ingredients and combine until flour is just incorporated.
- Add chocolate chips to the dough.
- Cover and refrigerate for about an hour IF YOU HAVE THE TIME. This is not a mandatory step.
- Form large balls of dough, about 1/4 cup, and drop onto parchment paper pan.
- Bake 8-10 minutes. Cookies should barely have brown on the edges.
- Let cool 5 minutes on the pan and then remove to cooling rack.

- While the green is festive, you certainly do not have to use food coloring for the cookies. Or you may lower the number of drops to make the green more subtle. I have used Watkins food coloring, which is dyed with vegetables and spices versus chemicals, and the recommended 10 drops does not turn the cookies green.
- You could make these chocolate chip cookies without the mint if you are not feeling a peppermint vibe and they turn out to be nice, generously sized, gooey chocolate chip cookies
- These are meant to be a bigger cookie but if you want them to be smaller, reduce the size of the cookie and lower the bake time slightly and bake until the edges are barely brown.
These cookies are a fun way to bring some more green to your day in the form of a yummy treat. They are truly yummy and won’t last long whether you’re sharing or hiding your own secret stash (no judgement from me!). Enjoy!
