Great as a snack, or on top of oatmeal or yogurt, this homemade recipe is so tasty and cuts out all the extra sugar and junk found in the store bought stuff. It also makes your house smell SO GOOD as you bake it in the oven!
Prep Time: 10 minutes Bake Time: 30 minutes Total Time: 40 minutes
Makes a full baking sheet of granola

- 2 cups oats (I use quick cook oats)
- 2 cups chopped nuts (walnuts, almonds, pecans, etc.)
- 1 teaspoon cinnamon
- 1/4 cup coconut oil
- 1/3 cup honey or maple syrup
- 1 Tablespoon vanilla

- Preheat oven to 300 degrees Fahrenheit
- Line a baking sheet with parchment paper
- In a large mixing bowl, add oats, nuts, and cinnamon, and mix together
- In a small, microwave safe bowl, add coconut oil and microwave until melted (about a minute).
- Add the honey to the coconut oil and whisk them together. Microwave another 30-60 seconds. Add vanilla and whisk together again.
- Pour wet ingredients over dry ingredients and stir until all of your oats and nuts are covered entirely.
- Pour granola mixture onto your baking sheet and spread it out into one thin, even layer.
- Bake for 25-30 minutes or until the edges are starting to show a little color.
- Let cool entirely before breaking it up into pieces.

- The granola will get crunchy as it cools, so don’t panic if it feels sort of soft immediately after coming out of the oven. This is why the last step is “let cool entirely.”
- I store mine in a large Ziploc bag or an airtight container to keep on the counter. It doesn’t last long, but will last a few months before starting to taste kind of stale.
- If you want a vegan recipe, simple use maple syrup in place of honey. I actually prefer the maple syrup over the honey for flavor.
This recipe is great for so many reasons. It’s easy, it’s gluten/dairy free, it doesn’t have all the junk and extra, unnecessary chemicals like the store bought stuff used to extend shelf life. It also makes your house smell like the best vanilla candle you could ever imagine having and it lasts for about an hour or two after it comes out of the oven. I sometimes make a batch before we even need another batch just to make the house smell great. True story. I hope you love it as much as I do!
