Garlic Roasted Potatoes & Veggies

I love anything on a sheet pan and tossed in the oven, and this is no exception! This side dish is simple, clean, and compliments a wide variety of main dishes nicely.


Prep Time: 15 minutes

Bake Time: 20 minutes

Total Time: 35 minutes

Makes 4-6 servings

  • 2 cups fresh broccoli florets
  • 2 cups fresh baby carrots
  • 8-10 mini potatoes, halved
  • 5 cloves garlic, or 3-4 Tablespoons jar garlic
  • Extra virgin olive oil, about 3 Tablespoons
  • Salt + pepper, to taste
  • Preheat oven to 425 degrees Fahrenheit.
  • Cut broccoli florets to bite sized pieces, if needed.
  • Cut mini potatoes in half.
  • Add all veggies to large mixing bowl.
  • Drizzle a decent amount of olive oil over the veggies and toss or stir to coat veggies.
  • Add garlic, salt, and pepper and toss or stir to coat evenly.
  • On a foil lined baking sheet, dump out the contents of your bowl onto the sheet and arrange veggies in single layer.
  • Bake for 15-20 minutes, or until slightly browned. Carrots will be slightly firm.
  • Serve hot.
  • This recipe is very versatile. I’ve done this with brussel sprouts instead of broccoli, added some cabbage ribbons to it, and If you want to really make it hearty, add some sliced ring bologna to the sheet. If you want to use whole carrots or even colorful ones (white, purple, etc), you can do that too.
  • You can add as much or as little garlic and olive oil as you like. I tend to go heavy on the garlic and just enough olive oil to coat the veggies a little so they don’t stick to the pan.
  • You can adjust the recipe to make as much or as little as you’d like. When I make this, it’s usually enough for 4 people and fills about 3/4 of a baking sheet.
  • If you don’t have a baking sheet you can use a 9×13 baking dish instead. If you’re planning on going from oven to table, a baking dish tends to work better than a sheet pan for serving purposes.

I love this as a side dish because it’s a way to get veggies in and it compliments so many main courses nicely. It’s simple and so easy to make without tons of prep or long bake times. You can even prep everything and bring it with to a get-together to bake there. I find the best recipes are usually the simplest.
