Coconut Cranberry Bars

A holiday spin on 7-Layer Bars, this is a great bar to share at your next get together or potluck. Get one for yourself first because you’ll likely go home with an empty pan!


Prep Time: 20 minutes

Bake Time: 25 minutes

Total Time: 45 minutes

Makes about 3 dozen bars

  • 1-1/2 cups graham cracker crumbs (about 24 squares worth)
  • 1/2 cup butter, melted
  • 1-1/2 cups white chocolate chips
  • 1-1/2 cups dried or fresh cranberries
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup flaked coconut
  • 1 cup pecan halves
  • Preheat oven to 350 degrees Fahrenheit.
  • Crush graham crackers to crumbs (I use a food processor to puree them).
  • Combine graham cracker crumbs with melted butter and press into a greased 9×13 baking dish.
  • In a bowl, combine the remaining ingredients and mix well.
  • Gently spread over the crust.
  • Bake for 25-28 minutes or until edges are golden brown.
  • Cool on wire rack. Cut into bars.
  • The first time I made this, I read the recipe wrong and accidentally used fresh cranberries instead of dried ones. The original recipe calls for dried ones, but the fresh worked great.
  • The recipe calls for pecan halves, but would also be good if they were chopped for smaller pieces mixed in.
