Cinnamon Roasted Almonds

The sweetness of these almonds is a fun holiday twist. Super easy to make, but watch out–they’re addicting!


Prep Time: 5 minutes

Cook Time: 1 hour, 10 minutes

Total Time: 1 hour, 15 minutes

Makes 4 cups

  • 1 egg white
  • 1 tsp water
  • 1 tsp vanilla
  • 4 cups whole unsalted almonds
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1 tsp salt
  • 1 tsp cinnamon
  • Preheat oven to 250 degrees Fahrenheit.
  • Line a cookie sheet with parchment paper. Set aside.
  • Beat egg white, water, and vanilla in large bowl until frothy.
  • Stir in almonds.
  • In a separate bowl, mix sugars, salt, and cinnamon and sprinkle over the almonds.
  • Stir until almonds are well coated.
  • Pour coated almonds onto prepped baking sheet.
  • Bake for 60-90 minutes, stirring occasionally (about every 15 minutes) to prevent them from burning.
  • Cool on pan. Store in airtight container.

Easy to make and also happen to be a great homemade gift, host/hostess gift, potluck treat, or just a delightful snack that’s something other than a cookie. Whatever you decide to do with them, I hope you enjoy them as much as I do!
